It happened again. The time that returns every year when I realize that the pieces of bread that I’ve been collecting are threatening to take over my freezer. I can’t stand eating the heels or hard pieces of bread, so instead of wasting them, I save them for later. The bread had to be used. After all, I couldn’t make space by removing my ice cream maker! That would just be wrong. Sure the weather has cooled down, leaves have started to fall and the sunlight has that filtered look to it, but I have high hopes for several warm ice cream laden days ahead of me.
So what to do with all that bread? I had an amazing French toast cupcake at a cute little cupcake shop that opened up near me. I tried to replicate it, but unfortunately it didn’t work. I adapted my mother’s bread pudding recipe, but the texture is too dense. I used way too much bread. The cupcakes had a light and airy feeling. I made bread pudding muffins. Not that there’s anything wrong with that. They’re really good, but not quite what I was trying for. Maybe next time. After I make some stuffing and seasoned breadcrumbs. I still have a lot of bread left to use. Enjoy!
Bread pudding muffins
(Makes a dozen large muffins)
- 10 cups old bread (ripped in pieces)
- 2 ½ cups Half & Half
- 3 cups vanilla rice milk
- 3 eggs
- ¼ cup butter
- ¾ cup maple syrup
- 1 cup raisins
- 1 T vanilla
- 1 T cinnamon
- a pinch of salt
Place bread pieces in very large bowl. Heat Half & Half and rice milk until warm. Pour over bread. Use large wooden spoon and stir until liquid combines with bread. Let sit until the liquid is thoroughly soaked into bread and becomes a soft mixture. In separate bowl, mix eggs. Melt butter. Pour butter, egg mixture and syrup over bread. Add in the remaining ingredients and combine. Pour batter into greased muffin pan or use paper liners. I haven’t been able to find paper liners for very large muffins. If you know where I can find some, please let me know! Bake muffins for about an hour. Let cool before removing from pan.

Thanks Cathy! That's so funny that you mentioned Paula Deen's recipe. I saw her make it last week on Ellen. She was hilarious! I guess it's bread pudding season!
